HACCP
Hazard Analysis Critical Control Points (HACCP) is a management system in which food safety is addressed through the analysis and control of biological, chemical, and physical hazards from raw material production, procurement and handling, to manufacturing, distribution and consumption of the finished product.
When creating a HACCP plan you must:
· Identify any hazards that must be avoided, removed or reduced.
· identify the critical control points (CCPs) the points when you need to prevent, remove or reduce a hazard in the stages of processing.
Here at Medicine Lodge Meat Company we have identified these hazards and created and implemented a detailed HACCP plan to ensure the safety of all the producers and consumers we provide products and processing services too. We have a designated, trained HACCP Coordinator who oversees the HACCP plan is implemented correctly and thoroughly.
